The Dolcetto is a kind of red wine more precocious among those cultivated in Piedmont: it matures in the half part of September, when its bunches are rich of sugar and are good to eat, too. This excellent red wine produced with Dolcetto grapes coming from the vineyards collocated in Serralunga d’Alba to an altitude of 330 mt s.l.m.: it presents a ruby red colour with intense yellow-crowned reflexes. The smell of it is fresh and fruited with mature cherry’s hints, in addition to currents and blackberry ones. The taste is warm and rich, endowed with a good structure, with a long aftertaste. This Dolcetto has to be drunk in combination with salami and cheeses, starters, first courses, risotto, soups, red meats , especially grilled ones.
The history of the cave is connected with that of Serralunga d’Alba. Giovanni founded his own winery in 1896: even now he is remembered, because he was able to give electrical current to his village. Today the cave is managed by Giovanni’s nieces, Camilla, Renato and Giovanni, that have followed the example of their predecessors. They produce a wine, that can be defined the mirror of tradition and of a territory, where it grows.
