The Dolcetto d'Alba of Paolo Scavino is produced with grapes deriving from the historical vineyards that go back up 1921 of the Vignolo vineyard in Costigliole Falletto, in an area where people were used to cultivate Nebbiolo. The colour of this wine is a ruby red one, with some yellow-crowned nuances: it smells fresh and soft, with mature cherry’, blackberry’ and current’s hints. Moreover the taste is dry, warm and fruited with a light aftertaste of almond. This is an excellent wine that accompanies every kind of meal or in alternative it is perfect in combination with salami and a typical Langa cheese called the ‘ Tuma di Langa’.
This cave was founded by Lorenzo Scavino and his son Paolo in 1921 in Castiglione Falletto. The winery counts about 23 hectares of vineyards, that allow the cave to sell 120000 bottles every year. Nowadays the wines’ production is managed by Enrico Scavino, together with his two daughters. The Scavino’s winery is known for its care and attention and for the belief that the viticulture is more important than the oenology. The wines distinguish themselves for the purity, the elegance and the twine of traditions and territories.
