The Champagne Brut Cuvèe 72 of Bruno Paillard is the crown jewel of the winery. It is produced with Pinot Noir (45%), Chardonnay (33%) and Pinot Munier (22%) grapes,all meticulously selected.
On view, it shows a beautiful straw yellow colour with a fine and soft perlage.
At nose, it releases on nose composite hints of red fruits,cherries, raspberries, in addition to background of exotic fruits. .
Full bodied and fresh in mouth, with a well-balanced acidity, it is excellent if drunk with spaghetti with clams, rice pie with vegetables, stir fry liver duck and Parma ham.
Bruno Paillard founds his cave producing Champagne wines in 1981, and even now it has his name. Every year the winery produces 500 000 bottles of Champagne, that derive from the best grapes of the area. The motto of Bruno Paillard is: ‘I sign only the rare Champagne’.
