The Montilla Moriles of the Bodega Toro Albala is a sweet wine, amber colored with orange reflexes, obtained by Pedro Ximenes grapes. To get this wine so particular, the grapes are harvested in August, when the conditions of ripening are ideal, and they are let “dried” on the ground on some particular jute disks. Turned by hand and subjected to a strong thermal excursion between day and night, the grapes keep unaltered its acidity. The must obtained is very concentrated, giving life to a rich and fascinating wine, scented of raisin, fig and apricot. Provided with a good acidity and a persistent ending, this wine is ideal to drink in combination with ice-cream, chocolate and blue cheeses.
The Bodega Toro Albalà is the most important of the Montilla Moriles denomination, in Spain.
Managed by Antonio Sanchex Romero, it produces until five hundred thousand bottles each year, and keeps more than 200 vintages of wine, in addition to 8 thousand barrels with the wine in refinement. The strong suite of the winery is the Don Pedro Ximenez, made in two versions: one younger with aromas of fresh fruits and the other one darker and complex, getting old more than twenty years in the oak barrels.
