Elegant and refined Barolo wine produced with Nebbiolo grapes coming from the Pajana area, situated in the so-called “Ginestra” cru in Monforte d’Alba. The colour of it is a wonderful and intense ruby red one, while its bouquet is various with spiced and fruited aroma and scents of licorice, cinnamon, black pepper, chocolate and vanilla. The taste is warm, intense and charming, endowed with persistence: it accompanies perfectly red meats, game, seasoned cheeses or first courses typical of Piedmont. This Barolo wine has a good capacity of aging: it must be bought, but it is better to drink it after some months.

Domenico Clerico, the present owner of this cave, began to approach to wine’s world in 1976: in those years his father cultivated some vineyards, that he sold to the Social Cave of Barolo. In 1981 Domenico decided to purchase a new plot of land, because at the time it was more convenient the wine making: in this manner he began to enlarge the winery. Today the cave counts about 21 hectares of vineyards, that allow Domenico to sell 90 000 bottles each year.
