The Pigato is, with Vermentino, the white wine more diffused in Liguria and it is especially widespread in the provinces of Genova, Imperia and Savona. Probably, its name derives from the dialectal word "pigau", that means “stained”, making reference to the small stains of rust color that cover the peel of its mature grapes. The Pigato grapes produce a good fresh wine, with a straw yellow color with green reflexes; it has an intense and floral perfume, with clear notes of thyme and basil, citrus and honey. It is perfect if combined with fried fish and vegetables and baked or barbecued fish, or with the classical “trofie” pasta with pesto sauce.
