Description

Chablis Premier Cru Vaillons by Domaine William Fèvre is a refined Chardonnay from Burgundy, expressing with elegance the minerality and distinctive character of Chablis' finest terroirs. It comes from vineyards located on the left bank of the Serein River, in one of the appellation's most prestigious areas, characterised by limestone-rich soils and Portlandian bedrock. Made from 100% Chardonnay grapes, hand-harvested, it stands out for its intense and elegant aromatic profile, with aromas of white-fleshed fruit, citrus and delicate floral notes, complemented by mineral nuances. On the palate, it reveals a beautiful balance of freshness, structure and roundness, with a smooth texture and a long, savoury, mineral finish. Vinification is carried out with particular care to preserve the delicacy of the grapes. Fermentation takes place partly in small stainless steel tanks and partly in French oak barrels. The wine is then aged for 13–14 months, with part of it remaining on fine lees, enhancing its structure and complexity while preserving the characteristic freshness of Chablis Chardonnay. An elegant and versatile white wine, ideal with oysters, shellfish, seafood, baked or grilled fish, as well as white meats and delicate poultry dishes.
