The Chablis Premier Cru Vaillons of William Fèvre is a white wine with great elegance and finesse obtained whit Chardonnay grapes. After aging for at least 6 months in barrique, this wine shows a straw-yellow color and develops at nose a fruity and spicy bouquet, on a mineral background, with notes of ripe peach, quince, butter and brioche bread.
Sapid and mineral in mouth, persistent, it combines perfectly with fish dishes, seafood, shellfishes and white meats, slightly blue cheeses.


Manufacturer

The foundation of the William Fevre winery is attributed to Monsieur William in the 1959, even if the roots of the family Fèvre in the Chablis village are ancient, dating back over 250 years.
The vineyards are situated on ancient lands in the earth of the Chablis terroirs, characterized by a soil and a subsoil that are rich of fossils and minerals. That gives a special taste to the wines of the Domaine William Fevre. The harvest of grapes is manual; following there is a careful and accurate selection of the best grapes. The purpose of the wine-making is to preserve the freshness and the mineral characteristics; for this reason old barriques are primarily used.
