The Chablis Vaillon 1er Cru of Domaine Pattes Loup winery is a very expressive and mineral wine, made with Chardonnay grapes cultivated with organic methods and harvested manually. After the spontaneous fermentation carried out by indigenous yeasts, the aging in barriques for about two years and the bottling without filtration follow, always using minimum quantities of sulfur dioxide. With a beautiful straw yellow color, in the nose it develops a broad and mineral bouquet, with notes of wild flowers and citrus. The mouthfeel is rich and savory, fine and elegant, with a long and persistent final. The Chablis Vaillon 1er Cru by Domaine Pattes Loup is perfect to drink with grilled fish, marinated salmon or risotto with seafood.

Manufacturer

The Domaine Pattes Loup is situated in Courgis and represents one of the emerging wineries in the world of Chablis. The company has been managed by Thomas Pico since 2005, year in which, after completing his studies in viticulture and oenology in Beaune, he inherited 2.5 hectares of vineyards. From the beginning, his goal was to give a new direction to the company, trying to exalt the varietal characteristics of Chardonnay, in full respect of the nature and the surrounding environment. Also in the winery, Thomas Pico works with the most natural approach possible, using spontaneous fermentations carried out by indigenous yeasts, minimizing the use of sulfur dioxide and avoiding the filtering of wines before bottling. The peculiarity of the wines of Domaine Pattes Loup is that they are very typical wines, characterized by a strong minerality and structure.
