Elegant and refined Champagne wine produced without the add of the so-called liqueur. It presents a wonderful, brilliant straw yellow colour, together with some persistent and refined bubbles, while its bouquet is elegant and refined, with some elegant perfumes of mature white fruit, white flowers as chamomile, jasmine and vanilla: these perfumes are in perfect balance with those of yeast and bread crust. Its taste is dry, endowed with pleasant freshness and good persistence; it combines perfectly with fish platters and soups, or with some types of fish.
Jean Mandois was the first wine maker in his family, and he began to produce wine in 1905 in Pierry. Today the cave is entrusted to Claude Mandois, who takes care of the 35 hectares of family’s vineyards. Moreover, every year the cave produces about 400 000 bottles of Champagne wines: however, the purpose of this winery is to reach quality through a careful selection of grapes.
