Extraordinary wine created in 1964 as a gift to the cave’s founder, produced with selected grapes coming from the best territories of the Cote des Blancs area (Chardonnay) and from the Reims Mountain (Pinot Noir). This wine owns a wonderful, intense golden yellow colour, while its bouquet is refined and intense, at the same time complex and mature, characterized by scents of white flowers, light memories of honey and vanilla, chestnut, almonds and dry fruit. It reveals a full and complex taste, endowed with pleasant freshness and extraordinary persistence, it is perfect to drink as appetizer or in combination with platters based on fish. Eventually, this wine is really perfect for important events.
Nicolas Billecart and Elizabeth Salmon married in 1818 in Mareuil sur Ay: this was an interesting cohesion, because he was passionate of Champagne, while she was the owner of some vineyards, and so they decided to join these two factors and found the Billecart Salmon cave. This is a family-run-business since 187 years, and together it is managed by Billecart’s nieces, Francois and Antoine.
