The Châteauneuf-du-Pape Omnia of Rotem & Mounir Saouma winery is a complex and mineral red wine, made with a blend of Syrah, Grenache, Mourvedre grapes grown in the vineyards of Pignan Les Grès, Pied de Baud, Les Serres, Cabrières. The carefully selected grapes in order to fully convey the individual peculiarities of the different terroirs, are vinified in different types of containers: wooden barrels of different sizes, tanks and cement "eggs". After 18 months of aging, a wine with a beautiful intense ruby red color is obtained, which offers complex and fruity aromas with pleasing hints of blueberry, black currant and cherry, on a spicy and aromatic background. In mouth the Châteauneuf-du-Pape Omnia of Rotem & of Mounir Saouma winery is balanced and deep, broad and enveloping, with a long and persistent final. With a good aging potential, it is perfect to drink in combination with red meat stew, baked lasagna or game.
Both of Lebanese origin with educational and working experiences in France, they have continued to invest in the area by acquiring several vineyards, including the liu-dit Les Gres and the vineyard Les Serres. The philosophy of Souma is to make a careful selection of terroirs so that these are able to fully convey the individual peculiarities to their wines. Careful and meticulous work is done in the cellar; the wines produced are characterized by purity and typicality and characterized by an excellent finesse and complexity.
