Farfalla Extra Brut by Ballabio is a classic method sparkling wine of rare elegance and refinement, which attests to Ballabio's commitment to producing wines of exceptional quality and character, to enhance a unique terroir like that of the Oltrepò Pavese region. It is produced using pure Pinot Noir grapes, carefully selected and handpicked. The cuvée is assembled using 80% vintage wines and 20% fine reserve wines, aged in stainless steel at controlled temperature to confer complexity and uniqueness. It undergoes refinement in the bottle for at least 30 months and an additional two months in bottles after disgorgement. With its beautiful straw yellow color and fine persistent perlage, Farfalla Extra Brut by Ballabio immediately captures attention. Delicate aromas of white flowers, citrus fruits, and green apple stand out on the nose, mingling with fragrant notes, creating a fresh and inviting bouquet. On the palate, it is fresh and savory, deep and complex. Manufacturer

The Ballabio Winery is one of the most important realities in the Oltrepò Pavese region and is a reference point for the sparkling wine world. Since 1905, when Angelo Ballabio founded the company, it has pursued a viticultural path aimed at producing distinctive and high-quality wines. Currently owned by Filippo Nevelli and his son Mattia, the winery boasts an area of 48 hectares with an annual production of 100,000 bottles. In the vineyard, work is meticulous and scrupulous, with very low environmental impact, without the use of pesticides and herbicides, in the utmost respect for biodiversity and the natural characteristics of the soil.
The winemaking process begins with the careful selection of the best grapes, harvested by hand during the harvest to ensure maximum quality. Grapes from each vineyard are pressed and vinified separately, in order to respect the characteristics of each terroir.
