This wine is a “dosage zero”: it means that this wine is made without the so-called liqueur d’expedition. In fact, at the end of the fermentation in bottle by using the traditional method, the dosage is made by adding only the original wine. It is a sparkling wine of high level, grown from grapes coming from different vineyards of the Alta Langa area. This wine presents a brilliant straw yellow colour, while its smell emanates elegant and complex hints of yeasts, linden, apples and mature white fruit. It is characterized by freshness, endowed with good structure and softness: for these reasons it is perfect if drunk as appetizer or in combination with fish, grilled fishes, and crayfishes.
The cave is founded by Enrico Serafino in the far 1978 in Canale d’Alba. In the course of the time this cave, that at the beginning included only some territories, began to increase and then it became one of the best-known cave of Piedmont. Enrico Serafino decided to begin some modernization works in 1990, and since 2002 the wine is produced, by following these new techniques, from the grapes’ squeezing out to the bottling. The cave is specialized in the production of classical wines as Arneis, and Barbera, but Enrico Serafino’s cave produces also refined wines as Barbaresco and some sparkling wines, whose grapes derive from the territory of the Langhe.
