The hand of Giovanni Almondo enhances the grape variety through a clear and rigorous approach, aimed at achieving maximum aromatic purity. Fermentation in stainless steel and aging on the fine lees preserve integrity, energy, and definition, building an elegant and vibrant profile. In the glass, it shows a bright straw-yellow colour with greenish reflections. On the nose, it opens with a crisp weave of citrus fruits, white flowers, and green apple, layered with a subtle herbal aromatic nuance and mineral notes reminiscent of wet stone and flint. On the palate, it is taut, vertical, and highly dynamic, supported by precise acidity and a savoury backbone that extends the finish with remarkable clarity. At the table, it shows great gastronomic versatility: it pairs naturally with raw fish and tartare, oysters and shellfish, as well as sushi and delicate Asian cuisine.
